My family loves this Mexican style meatloaf. It was actually one of the first recipes I started making for Jeff way back when that he really enjoyed. He recently asked me to make it again and I decided that this week was a great time for it with the rain and cold. We also celebrated my mom’s birthday when she came up to visit this week so all enjoyed it with my cornbread recipe, refried beans, vegetables and fresh avocado. The meatloaf is best topped with the sauce below. This is an easy recipe that the family will enjoy.
Serves 5 – 6
- 1 cup salsa, divided
- 6 Tbsp sour cream
- 20 oz 90% lean ground beef or ground turkey (I usually use the 99% lean ground turkey)
- 1/2 cup oats, uncooked
- 1 tspn dried parsley flakes
- 3/4 cup shredded cheddar cheese
Preheat oven to 350 degrees. Spray a 9×5 inch loaf pan with cooking spray, set aside. In a medium bowl, combine 1/2 cup salsa and the sour cream, refrigerate.
In a large mixing bowl, combine meat, oats, remaining 1/2 cup salsa, parsley and cheese – mix well.
Pat mixture into prepared loaf pan. Bake for 45 to 50 minutes. Place pan on wire rack and let stand for 5 minutes. Cut into slices and serve with prepared sauce and avocado.
